  • 1 tablespoon olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 jalapeno pepper seeded and diced (optional, for added heat)
  • 1 pound boneless chicken breasts boiled and shredded into pieces
  • 2 teaspoons cumin powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 2 cans 15 ounces each white beans (such as cannellini or Great Northern beans), drained and rinsed
  • 4 cups chicken broth
  • 1 cup frozen corn kernels
  • Salt and pepper to taste
  • Juice of 1 lime
