- 1 tablespoon olive oil
- 1 onion diced
- 3 cloves garlic minced
- 1 jalapeno pepper seeded and diced (optional, for added heat)
- 1 pound boneless chicken breasts boiled and shredded into pieces
- 2 teaspoons cumin powder
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 2 cans 15 ounces each white beans (such as cannellini or Great Northern beans), drained and rinsed
- 4 cups chicken broth
- 1 cup frozen corn kernels
- Salt and pepper to taste
- Juice of 1 lime

Instructions
- Boiled your boneless skinless chicken breasts and shred them into bite sized pieces.
