Ingredients
  

  • 6 large eggs
  • 1 cup cherry tomatoes
  • 1 cup cubed whole grain bread such as whole wheat or multigrain
  • 1 cup diced cooked turkey sausage or lean ham
  • 1 cup baby spinach leaves
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing the skillet
  • Optional toppings:
  • avocado slices
  • shredded cheese
  • salsa
  • hot sauce

Instructions
 

  • Prep the ingredients
  • Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then reducing the heat and simmering for 9-10 minutes.
  • Drain and cool the eggs in cold water, then peel and slice them into halves.
  • Meanwhile, thread cherry tomatoes, cubed bread, diced turkey sausage or ham, baby spinach leaves, and egg halves onto skewers in any desired order.
  • Season the skewers
  • Sprinkle the skewers with salt and pepper to taste, and any other desired seasonings or herbs.
  • Cook the skewers
  • Heat a grill pan or skillet over medium heat and lightly grease it with cooking spray or olive oil.
  • Place the skewers on the hot grill pan or skillet and cook for 3-4 minutes on each side, or until the ingredients are heated through and slightly charred.
  • Serve
  • Remove the skewers from the grill pan or skillet and arrange them on a serving platter.

Notes

Tips
If using wooden skewers, remember to soak them in water for about 30 minutes before threading the ingredients onto them to prevent them from burning during cooking.
