Prep the ingredients
Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then reducing the heat and simmering for 9-10 minutes.
Drain and cool the eggs in cold water, then peel and slice them into halves.
Meanwhile, thread cherry tomatoes, cubed bread, diced turkey sausage or ham, baby spinach leaves, and egg halves onto skewers in any desired order.
Season the skewers
Sprinkle the skewers with salt and pepper to taste, and any other desired seasonings or herbs.
Cook the skewers
Heat a grill pan or skillet over medium heat and lightly grease it with cooking spray or olive oil.
Place the skewers on the hot grill pan or skillet and cook for 3-4 minutes on each side, or until the ingredients are heated through and slightly charred.
Serve
Remove the skewers from the grill pan or skillet and arrange them on a serving platter.
Serve the skewers warm with optional toppings such as avocado slices, shredded cheese, salsa, or hot sauce on the side.
