A breakfast casserole that’s a delicious and nutritious option for brunch!
If you’re out of time and ideas for a brunch, then try this breakfast recipe! This is one of the tastiest healthy breakfast ideas and all you have to do is arrange slices of bread in a baking dish, pour over a mixture of eggs, milk, cinnamon, and vanilla extract! If you want it extra amazing, let it soak overnight and then bake until golden brown in the morning to make one of my hit healthy brunch recipes!

French Toast Casserole
Ingredients
- 8 slices whole grain bread cut into cubes
- 4 large eggs
- 1 cup unsweetened almond milk or any milk of your choice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons maple syrup or honey
- Cooking spray or olive oil for greasing the baking dish
- Optional toppings:
- fresh berries
- Greek yogurt
- chopped nuts
- A drizzle of maple syrup
- Nutritional Information per serving:
- Calories: Approximately 200-250 calories per serving
- Total Fat: Approximately 6-8g
- Carbohydrates: Approximately 30-35g
- Protein: Approximately 10-12g
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking dish with cooking spray or olive oil.
- Prepare the bread cubes by cutting the whole grain bread slices into cubes and arranging them evenly in the greased baking dish.
- Make the egg mixture in a large mixing bowl by whisking together the eggs, almond milk, vanilla extract, ground cinnamon, ground nutmeg, and maple syrup until well combined.
- Pour the egg mixture evenly over the bread cubes in the baking dish, ensuring all the bread is coated.
- Use a spatula or spoon to gently press down on the bread to help it soak up the mixture.
- Allow the casserole to sit for about 10-15 minutes to allow the bread to absorb the egg mixture.
- Then let’s bake the casserole!
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the French toast is golden brown and set in the center.
- Once baked, remove the casserole from the oven and let it cool slightly.
- Slice into squares or rectangles and serve warm, topped with fresh berries, Greek yogurt, chopped nuts, or a drizzle of maple syrup if desired.
