Ingredients
  

  • 8 slices whole grain bread cut into cubes
  • 4 large eggs
  • 1 cup unsweetened almond milk or any milk of your choice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons maple syrup or honey
  • Cooking spray or olive oil for greasing the baking dish
  • Optional toppings:
  • fresh berries
  • Greek yogurt
  • chopped nuts
  • A drizzle of maple syrup

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking dish with cooking spray or olive oil.
  • Prepare the bread cubes by cutting the whole grain bread slices into cubes and arranging them evenly in the greased baking dish.
  • Make the egg mixture in a large mixing bowl by whisking together the eggs, almond milk, vanilla extract, ground cinnamon, ground nutmeg, and maple syrup until well combined.
  • Pour the egg mixture evenly over the bread cubes in the baking dish, ensuring all the bread is coated.
  • Use a spatula or spoon to gently press down on the bread to help it soak up the mixture.
  • Allow the casserole to sit for about 10-15 minutes to allow the bread to absorb the egg mixture.
  • Then let’s bake the casserole!
  • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the French toast is golden brown and set in the center.
  • Once baked, remove the casserole from the oven and let it cool slightly.
  • Slice into squares or rectangles and serve warm, topped with fresh berries, Greek yogurt, chopped nuts, or a drizzle of maple syrup if desired.
