Preheat your oven to 350°F (175°C).
Grease a 9x13 inch baking dish with cooking spray or olive oil.
Prepare the bread cubes by cutting the whole grain bread slices into cubes and arranging them evenly in the greased baking dish.
Make the egg mixture in a large mixing bowl by whisking together the eggs, almond milk, vanilla extract, ground cinnamon, ground nutmeg, and maple syrup until well combined.
Pour the egg mixture evenly over the bread cubes in the baking dish, ensuring all the bread is coated.
Use a spatula or spoon to gently press down on the bread to help it soak up the mixture.
Allow the casserole to sit for about 10-15 minutes to allow the bread to absorb the egg mixture.
Then let’s bake the casserole!
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the French toast is golden brown and set in the center.
Once baked, remove the casserole from the oven and let it cool slightly.
Slice into squares or rectangles and serve warm, topped with fresh berries, Greek yogurt, chopped nuts, or a drizzle of maple syrup if desired.
