Healthy Snacks For Kids
These cheesy chicken and spinach egg rolls are not only tasty and kid-friendly but also a great way to sneak in some healthy spinach into their diet. Feel free to customize the filling with other ingredients your kids enjoy, such as diced bell peppers or mushrooms.

CHEESY GARDEN ROLLS
Ingredients
- 1 cup cooked chicken rotisserie chicken works well
- 1 cup shredded mozzarella cheese
- 1 cup chopped fresh spinach leaves
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 10 egg roll wrappers
- Water for sealing the egg rolls
- Cooking spray or oil for frying
Instructions
- Cook or boil the chicken if using raw. Then shred or dice it into tiny pieces. Rotisserie chicken works well here and adds a nice flavor.
- Preheat your oven to 400°F (200°C) if you prefer baking the egg rolls instead of frying.
- Prepare the filling by taking a mixing bowl and combining the cooked chicken, shredded mozzarella cheese, chopped spinach, grated Parmesan cheese, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Assemble the egg rolls by laying an egg roll wrapper on a clean surface with one corner pointing towards you (like a diamond shape).
- Place about 2 tablespoons of the filling mixture diagonally across the center of the wrapper. Fold the bottom corner over the filling, then fold in the side corners.
- Moisten the top corner with water, then roll the wrapper tightly away from you to seal the egg roll.
- Repeat with the remaining wrappers and filling.
Fry or bake the egg rolls.
- Frying method: Heat oil in a deep skillet or pot over medium-high heat until it reaches 350°F (180°C). Carefully place the egg rolls in the hot oil, seam side down, and fry for about 3-4 minutes, or until golden brown and crispy. Use tongs to turn the egg rolls occasionally for even frying. Once cooked, transfer the egg rolls to a paper towel-lined plate to drain excess oil.
- Baking method: Place the assembled egg rolls on a baking sheet lined with parchment paper. Lightly spray or brush the egg rolls with cooking spray or oil. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
- Serve the cheesy chicken spinach egg rolls warm with your favorite dipping sauce, such as marinara sauce, ranch dressing, or sweet chili sauce. Enjoy!
