CRISPY CHICKEN CUCUMBER ROUNDS
Ingredients
- 1 cup cooked chicken breast
- 1/4 cup mayonnaise or Greek yogurt as a healthier alternative
- 1 tablespoon Dijon mustard
- 1 tablespoon honey optional, adjust to taste
- 1/4 cup finely diced celery
- 2 tablespoons finely chopped green onions
- Salt and pepper to taste
- 2 large cucumbers
- Fresh parsley or dill for garnish optional
Instructions
- Cook the chicken and finely dice or shred it into tiny pieces.
- Prepare the chicken salad in a mixing bowl by combining the cooked chicken breast, mayonnaise (or Greek yogurt), Dijon mustard, honey (if using), diced celery, and chopped green onions.
- Mix well until all ingredients are evenly incorporated.
- Now Season with salt and pepper to taste.
- Wash the cucumbers thoroughly and slice them into rounds, each about 1/2 inch thick.
- You can leave the skin on for added texture and nutrients, or peel the cucumbers if you prefer.
- Now using a small spoon or melon baller, scoop out a small portion of the center of each cucumber round to create a shallow well for the chicken salad.
- Be careful not to scoop all the way through.
- Spoon a small amount of the chicken salad mixture into each cucumber round, pressing down gently to fill the cavity and create a neat mound of salad on top.
- Garnish the cucumber chicken salad bites with fresh parsley or dill, if desired, for added flavor and visual appeal.
- Arrange the bites on a serving platter and serve immediately, or refrigerate until ready to serve.
