Instead of store brought muffins, you can make your own healthy tasty muffins at home that your kids will finish off in a wink! These Banana, Avocado, and Apple Muffins are not only moist and flavorful but also make healthy lunch snacks also packed with nutrients from the fruits and whole wheat flour. They make a perfect snack or breakfast option for kids.

BANANA, AVOCADO, AND APPLE MUFFINS

Ingredients
  

  • 1 ripe banana
  • 1 ripe avocado
  • 1 small apple
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup milk dairy or plant-based
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with paper liners or grease the cups with cooking spray.
  • Peel and mash a ripe banana that is yellow but not too soft as well.
  • Peel and mash an avocado that is ripe. You can know it is ripe if it is easy to press when you apply gentle pressure with a finger.
  • Peel and grate an apple.
  • In a large mixing bowl, combine the mashed banana, mashed avocado, grated apple, eggs, honey or maple syrup, milk, and vanilla extract.
  • Mix until well combined.
  • In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Be careful not to overmix; a few lumps are okay.
  • Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  • You can add a few oats or chopped nuts on top of each muffin for added texture and crunch.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  • This recipe also makes for a great healthy lunch snack!
  • Once cooled, serve the muffins and enjoy your healthy snack!

Notes

TIP: One cooled you can take out the muffins and place them in small colorful muffin liners for a store brought effect!
