This Breakfast Burrito Bar is a delicious and customizable option for brunch
This is one of those special healthy brunch recipes that no one will be able to resist! Its full of veggies, meat and eggs, so it’s a full Mexican breakfast all in one. If you want it even tastier use authentic medium salsa and this healthy breakfast idea will be everyone’s favorite. You just prepare a variety of fillings such as scrambled eggs, cooked bacon or sausage, sautéed vegetables, cheese, salsa, and tortillas for guests to build their own breakfast burritos and it’s a customizable burrito bar!

Healthy Breakfast Burrito Bar
Ingredients
- Whole wheat tortillas regular or gluten-free
- Scrambled eggs made with whole eggs or egg whites
- Cooked turkey sausage or bacon optional
- Black beans drained and rinsed
- Sautéed vegetables bell peppers, onions, spinach, mushrooms, etc.
- Diced tomatoes
- Salsa mild, medium, or hot
- Guacamole or sliced avocado
- Shredded cheese cheddar, Monterey Jack, etc.
- Greek yogurt plain or flavored or sour cream
- Chopped fresh cilantro or green onions for garnish
- Hot sauce optional
Instructions
- Prepare the ingredients
- Cook the scrambled eggs, sauté the vegetables, cook the turkey sausage or bacon, and heat the black beans.
- Keep each ingredient warm until ready to serve.
- Set up the Burrito Bar
- Arrange the cooked ingredients, along with the remaining toppings, in separate bowls or containers on a table or serving area.
- Provide tongs or spoons for serving.
- Warm the tortillas
- Heat the whole wheat tortillas in a microwave or on a skillet until warm and pliable.
- Keep them covered with a clean kitchen towel to prevent them from drying out.
- Assemble the burritos
- Invite guests to create their own breakfast burritos by layering their desired ingredients onto a warmed tortilla.
- Start with a base of scrambled eggs and add toppings such as cooked sausage or bacon, black beans, sautéed vegetables, diced tomatoes, salsa, guacamole or avocado slices, shredded cheese, Greek yogurt or sour cream, and chopped cilantro or green onions.
- Fold the burritos
- Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito.
