Ingredients
  

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 ripe bananas mashed
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt plain or vanilla
  • Optional add-ins: chopped nuts dried fruits, chocolate chips, etc.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×5 inch loaf pan with cooking spray or line it with parchment paper.
  • In a large mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, ground cinnamon, and salt until well combined.
  • In a separate bowl, mash the ripe bananas using a fork or potato masher until smooth.
  • Add the honey or maple syrup, unsweetened applesauce, eggs, vanilla extract, and Greek yogurt to the mashed bananas.
  • Stir until all the wet ingredients are well combined.
  • Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined.
  • Be careful not to overmix.
  • If using any optional add-ins such as chopped nuts, dried fruits, or chocolate chips, gently fold them into the batter until evenly distributed.
  • Pour the batter into the prepared loaf pan and spread it out evenly using a spatula.
  • Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  • Once baked, remove the banana bread from the oven and let it cool in the loaf pan for 10-15 minutes.
  • Then, carefully transfer the bread to a wire rack to cool completely before slicing.
  • Slice the banana bread into 12 equal slices and serve.
  • Enjoy it warm or at room temperature as part of your brunch spread.

Storage Tips
