These Baked Oatmeal Cups with add ins make for a hearty and nutritious start to the day!

Oatmeal can be an amazing brunch option if you know how to present it! One of my favorite healthy brunch recipes is to make oven baked oatmeal cups with delicious add ins that will take normal oats to another level of flavor! All other healthy breakfast ideas are more complicated but with this recipe, you can just mix oats with milk, eggs, maple syrup, cinnamon, and then top with your choice of add-ins like fruits, nuts, or chocolate chips. Then pour into muffin tins and bake until set and et voila!

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups unsweetened almond milk or any milk of your choice
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries such as blueberries, raspberries, strawberries
  • Optional add-ins:
  • chopped nuts
  • shredded coconut
  • chocolate chips
  • diced apples
  • mashed bananas
  • chia seeds

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 12-cup muffin tin with cooking spray or line with paper liners.
  • In a large mixing bowl, mix in the dry ingredients by combining the rolled oats, baking powder, ground cinnamon, and salt.
  • Stir well!
  • In a separate bowl, whisk together the wet ingredients by combining the unsweetened almond milk, eggs, maple syrup or honey, and vanilla extract until well combined.
  • Combine wet and dry ingredients. Pour the wet ingredients into the bowl with the dry ingredients and mix until everything is well incorporated.
  • Add berries and optional add-ins now.
  • Gently fold in the mixed berries and any optional add-ins (such as chopped nuts or chocolate chips) until evenly distributed throughout the oatmeal mixture.
  • Divide the oatmeal mixture evenly among the prepared muffin cups, filling each cup to the top.
  • Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the oatmeal cups are set and lightly golden on top.
  • Once baked, remove the oatmeal cups from the oven and let them cool in the muffin tin for a few minutes.
  • Transfer the oatmeal cups to a wire rack to cool completely.
  • Serve the oatmeal cups warm or at room temperature.
  • They can be enjoyed plain or topped with a dollop of Greek yogurt, a drizzle of maple syrup, or additional fresh berries if desired.

Notes

Tips

Store any leftover oatmeal cups in an airtight container in the refrigerator for up to 3-4 days. They can be reheated in the microwave before serving.
Customize the oatmeal cups with your favorite fruits, nuts, seeds, or other add-ins to suit your taste preferences.
