Preheat your oven to 350°F (175°C).
Grease a 9x5 inch loaf pan with cooking spray or line it with parchment paper.
In a large mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, ground cinnamon, and salt until well combined.
In a separate bowl, mash the ripe bananas using a fork or potato masher until smooth.
Add the honey or maple syrup, unsweetened applesauce, eggs, vanilla extract, and Greek yogurt to the mashed bananas.
Stir until all the wet ingredients are well combined.
Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined.
Be careful not to overmix.
If using any optional add-ins such as chopped nuts, dried fruits, or chocolate chips, gently fold them into the batter until evenly distributed.
Pour the batter into the prepared loaf pan and spread it out evenly using a spatula.
Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Once baked, remove the banana bread from the oven and let it cool in the loaf pan for 10-15 minutes.
Then, carefully transfer the bread to a wire rack to cool completely before slicing.
Slice the banana bread into 12 equal slices and serve.
