If you’re planning a brunch for your friends and some of them are vegan or following a vegetarian diet while some are not and you’re looking for healthy breakfast ideas, you can’t go wrong with this hearty Mushroom sauté. It’s not a lot of work, requires just one pan or skillet and is super delicious with bread at breakfast.

All you need to do is heat a pan or skillet over medium, add in your oil, toss in sliced onions, peppers or any vegetables of your choice, I prefer using onions and peppers because they deliver a nice sweetness that goes well with the earthiness of the mushrooms! Prepare your mushrooms and toss them in after the vegetables are slightly cooked. Add the minced garlic and spices and a little stir. The first thing to remember is to choose the right mushrooms for the dish you are making. There are a lot of different types of mushrooms and all of them have different flavors and textures. The best mushrooms to sauté are button mushrooms, cremini mushrooms, portobello mushrooms, and shiitake mushrooms.

Cleaning the Mushrooms

Cleaning mushrooms seems to be easy but it’s not. A lot of people don’t know this but mushrooms tend to absorb water easily and if you are washing them, you have to do it without soaking them and then gently dab the excess moisture away with a paper towel. You can also take off their cover if you don’t want to wash them.

Slicing the Mushrooms

Make sure that when you slice the mushrooms, they are not too thick and not too thin and all of them are uniform. This is important because then all of the mushrooms in the pan will be done at the same time and will have the same texture and color.

Sautéing the Mushrooms

Using the right fat when sautéing is essential, while butter is the best option and olive oil works well too, I would recommend using both in equal amounts for the best results. When sautéing, make sure that you never overcrowd the pan. If you have a lot, make two or more batches. Ingredients
  

  • 2 tablespoons olive oil/butter
  • 2 large red bell peppers sliced
  • 1 large onion sliced
  • 8 ounces 225g mushrooms, sliced (cremini or button mushrooms work well)
  • 1 teaspoon cumin
  • 1 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • Optional: Fresh parsley chopped, for garnish

Instructions
 

  • Heat your skillet or non-stick frying pan over medium heat and add the olive oil or butter.
  • Add in the sliced onions and bell peppers to the skillet together and sauté them for a few minutes until they soften a little. We want a little bit of a bite to the veggies.
  • Now add in the sliced mushrooms and sauté everything together for 5-6 minutes until the mushrooms are fully cooked and a little brown around the edges.
  • Season with spices, salt, black pepper, cumin and red pepper.
  • Note: You can adjust the red pepper according to how spicy you like your food.
  • Remove your pan from the heat and immediately transfer to a serving dish. If you want, you can garnish the dish with freshly chopped parsley for added flavor and color.
  • Serve the mushroom sauté as a side dish or as a topping for pasta, rice, quinoa, or your favorite grain.
