Ingredients
  

For the Fruit Salad:

  • 2 cups strawberries sliced
  • 2 cups blueberries
  • 2 cups grapes halved
  • 2 cups pineapple chunks
  • 2 kiwi fruits peeled and sliced
  • 1 mango peeled and diced
  • Juice of 1 lime or lemon
  • Optional: Fresh mint leaves for garnish

For the Spicy Lime Dressing:

  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons olive oil
  • 1 clove garlic grated
  • 1 teaspoon honey or agave syrup optional, for sweetness
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon chili powder adjust to taste
  • 1/4 teaspoon paprika
  • Salt and black pepper to taste

Optional:

  • 1 small chili pepper such as jalapeño or serrano, finely chopped, for extra heat

Step by Step Instructions

    For the Fruit Salad:

    • Wash all the fruits thoroughly and dry them with a paper towel.
    • Peel and cut up the pineapple into small bite sized pieces if not using canned. Peel and slice the kiwi and mangoes into bite sized pieces as well.
    • In a large mixing bowl, combine all the prepared fruits: strawberries, blueberries, grapes, pineapple chunks, kiwi fruits, and diced mango.

    For the Spicy Lime Dressing:

    • In a small bowl, whisk together the lime juice, olive oil, grated garlic, and honey if using. Mix until well combined.
    • Now add the cumin, chili powder, paprika, salt, and black pepper to the bowl. If you're using a fresh chili pepper, add it in as well.
    • Whisk all the ingredients together until the dressing is well emulsified and the spices are evenly distributed.
    • It’s very important to taste the dressing and adjust the seasoning as needed, adding more salt, pepper, or spices to suit your preferences.
    • Once you're satisfied with the flavor, you can gently toss the fruits together with the dressing until they are evenly mixed and coated with the dressing.
    • The dressing not only adds flavor to the salad but the citrus from the lime also helps to prevent the fruits from browning.
    • Optional: Garnish the fruit salad with fresh mint leaves for added flavor and presentation.
    • TIP: Serve the fruit salad immediately or refrigerate it for about 30 minutes to chill before serving.
