COTTAGE CHEESE AND PINEAPPLE PARFAIT

Ingredients
  

  • 1 cup cottage cheese low-fat
  • 1/2 cup pineapple chunks fresh or canned, drained
  • 1 tablespoon honey or maple syrup optional
  • Optional toppings
  • shredded coconut
  • chopped nuts such as almonds or walnuts
  • mint leaves

Instructions
 

Prepare the Pineapple

  • If using fresh pineapple, peel and core the pineapple, then chop it into bite-sized chunks. If using canned pineapple, drain the pineapple chunks.

Assemble the Parfait

  • In a serving bowl or glass, layer the cottage cheese and pineapple chunks. You can alternate between spoonful’s of cottage cheese and pineapple chunks to create layers.

Sweeten (optional)

  • If desired, drizzle honey or maple syrup over the cottage cheese and pineapple layers to add sweetness. You can adjust the amount of sweetener according to your taste preference.

Optional Toppings

  • Sprinkle shredded coconut or chopped nuts on top of the parfait for added flavor and texture.
  • Garnish with a few fresh mint leaves for a pop of color and freshness.
