SPICY LIME EDAMAME

When I’m craving a healthy snack option that’ssavory and spicy, this is my go to recipe!

Ingredients
  

  • 2 cups frozen edamame beans thawed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Zest and juice of 1 lime
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional garnish

  • Chopped cilantro
  • Sesame seeds

Instructions
 

Cook the Edamame

  • Bring a pot of water to a boil and add the thawed edamame beans.
  • Cook for about 3-5 minutes or until the edamame is tender. Drain and set aside.

Prepare the Spicy Lime Dressing

  • In a small bowl, whisk together the olive oil, chili powder, lime zest, lime juice, minced garlic, salt, and black pepper until well combined.

Coat the Edamame

  • Transfer the cooked edamame beans to a large mixing bowl.
  • Pour the spicy lime dressing over the edamame beans and toss until they are evenly coated.

Serve and Garnish

  • Transfer the dressed edamame beans to a serving dish.
  • Garnish with chopped cilantro and sesame seeds for extra flavor and visual appeal.
  • Enjoy!
