SPICY HARD-BOILED EGGS

- 4 hard-boiled eggs
- 2 tablespoons mayonnaise
- 1 teaspoon hot sauce adjust to taste
- 1/2 teaspoon paprika
- Salt and pepper to taste

Prepare the Hard-Boiled Eggs
Start by hard-boiling the eggs. Place the eggs in a saucepan and cover them with cold water.
Bring the water to a boil over medium-high heat, then reduce the heat to low and let the eggs simmer for about 10-12 minutes.
Once the eggs are cooked, transfer them to a bowl of ice water to cool down quickly. This will make them easier to peel.
Peel and Slice the Eggs
Once the eggs are cool enough to handle, carefully peel off the shells and discard them.
Slice each hard-boiled egg in half lengthwise, and carefully remove the yolks.
Prepare the Filling
In a small bowl, mash the egg yolks with a fork until they are smooth and creamy.
Add mayonnaise, hot sauce, paprika, salt, and pepper to the mashed yolks. Mix until well combined. Adjust the amount of hot sauce according to your desired level of spiciness.
