RAINBOW HARVEST SALSA

Ingredients
  

  • 1 cup diced fresh strawberries
  • 1 cup diced mango
  • 1 small kiwi
  • 1 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 2-3 diced yellow tomatoes
  • 1 jalapeño pepper seeded and finely chopped (optional, for a bit of heat)
  • 1/4 cup chopped fresh cilantro or mint leaves
  • Juice of 1 fresh lime
  • Salt and pepper to taste

Instructions
 

  • Wash, peel and take out the pit of the mango and dice it.
  • Peel and dice the cucumber and kiwi into small pieces.
  • Cut the red bell pepper, and red onion into small, uniform pieces.
  • If using jalapeño pepper, make sure to remove the seeds and finely chop it.
  • Combine the ingredients in a large mixing bowl by throwing in the diced fruits and veggies.
  • Add the chopped cilantro or mint leaves for extra freshness and flavor.
  • Season the salsa by squeezing the juice of one lime over the fruit and veggie mixture.
  • Season with salt and pepper to taste.
  • Mix well to combine all the ingredients evenly.
  • Chill and let flavors meld
  • Cover the bowl with plastic wrap or transfer the salsa to an airtight container.
  • Refrigerate for at least 30 minutes to allow the flavors to meld together and develop.
  • Once chilled, give the salsa a quick stir, then transfer it to a serving bowl.
  • Serve the fruit and veggie salsa with your child's favorite dippers, such as tortilla chips, pita chips, or sliced veggies like carrot sticks or cucumber rounds.
  • This recipe also makes a great healthy lunch snack!
