Ingredients
  

  • 2 large bell peppers any color, washed and sliced into strips or rings
  • 2 ripe avocados
  • 1 small tomato diced
  • 1/4 cup red onion finely chopped
  • 1 clove garlic minced
  • Juice of 1 lime
  • Salt and pepper to taste

Optional Garnish

  • Chopped cilantro
  • Diced jalapeño
  • Crumbled queso fresco

Instructions
 

Prepare the Guacamole

  • Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
  • Mash the avocado with a fork until smooth or slightly chunky, depending on your preference.
  • Add the diced tomato, chopped red onion, minced garlic, and lime juice to the mashed avocado. Mix well to combine. Season the guacamole with salt and pepper to taste. Adjust the seasoning if needed.

Slice the Bell Peppers

  • Wash the bell peppers thoroughly under running water, then cut off the tops and remove the seeds and membranes.
  • Slice the bell peppers into strips or rings, depending on your preference.
  • Assemble the Bell Pepper Guacamole Bites
  • Spoon a dollop of guacamole onto each bell pepper slice or ring, spreading it out evenly.
